Bruschetta with Goat Cheese, Garlic and Tomatoes Ingredients: Directions: Preheat oven to 325 degrees. Place bread on baking sheet. Brush olive oil on both sides of slices. Bake until golden, about 6 minutes per side. Remove toasts from oven. Combine chopped garlic, seeded plump tomatoes and fresh lemon juice in medium bowl. Season with generous amount of salt and pepper. Toss to combine. Preheat oven to 350 degrees. Spread goat cheese over toasts; arrange on baking sheet. Spoon tomato-garlic mixture onto toasts, dividing equally. Bake until heated through, about 8 minutes. Transfer bruschetta to platter. Sprinkle with basil or mint. That's it!
Prosciutto Lasagna Ingredients: Directions: Cook lasagna noodles according to package directions or until tender but still firm. Drain, keep warm. To make the sauce, in a large saucepan or cast iron skillet, over medium-high high heat, saute the garlic, onion and prosciutto in the olive oil for 4 minutes. Add the lean beef, oregano, a touch of black pepper and saute 10 minutes. Add the wine and cook until the wine is almost evaporated. Add tomatoes and basil, reduce heat and simmer sauce 35 to 40 minutes or until most of the liquid has evaporated. Grease a 9" x 12" or larger, deep sided baking pan. Arrange a first layer of lasagna noodles, a layer of the beef and prosciutto tomato sauce, cottage cheese, parmesan and mozzarella cheese. Add a second alternating layer of noodles, sauce and other ingredients. Repeat until pan is full ending up with a top layer of sauce. Sprinkle with parmesan cheese and bake in a pre-heated oven at 400 degrees for 30 minutes. Garnish with fresh basil Tip: When layering the pasta, place bottom layer in pan so the ends lay over the sides of the pan. For the final layer lay the ends from the first layer back-over the top. This helps to hold lasagna together when cutting serving portions. That's it!
Vitello alla Capricciosa
Ingredients: For the Salad:
Directions: Chop tomatoes and red onion, combine in large bowl with arugula and radicchio. Add oil, balsamic vinegar, oregano, salt and pepper and mix well. Beat eggs lightly. Mix together bread crumbs, pecorino cheese and parsley. Dredge veal cutlets in flour, egg, and then bread crumbs making sure both sides are breaded. Heat olive oil in large saute pan over medium heat. Cook cutlets in olive oil until browned on both sides, 2-3 minutes per side. Transfer cutlets to plates, spoon portion of the salad over top of each cutlet and serve. Serves 4. That's it!

BBC News - June 6 - Italy's right-wing Northern League has hailed its fiery leader Umberto Bossi as he made his first public address since suffering a heart attack in 2004. Mr. Bossi was greeted ecstatically by thousands of the party faithful as he spoke in the northern town of Pontida. The 62-year-old - who suffered partial brain damage - looked weak and had to stop several times during his speech. At the party rally, the Northern League also renewed its call to ditch the euro and return to the lira. The party launched it campaign earlier in June, arguing that the EU's single currency has led to price increases and hit small Italian businesses. Bossi's delight Mr. Bossi looked a shadow of his former self as he addressed the cheering crowd of the largely eurosceptic Northern League. He expressed his delight over recent blows suffered by the EU, in an apparent reference to the rejection of the bloc's first constitution by the French and Dutch voters and also the deepening budget row. "I knew Europe would fail," Mr Bossi said to loud cheers. Mr. Bossi - whose party in part of the governing coalition led by Prime Minister Silvio Berlusconi - also renewed his call for the creation of a free Northern Italy, known as Padania. "No-one will stop us. Free Padania, Padania for ever, then you Pontida," he said. 'Lira plan' Other Northern League leaders used the meeting to press for Italy's withdrawal from the 12-nation eurozone. "The euro has made us all poorer," said senior party official Roberto Calderoli. Party members were also asked to vote on one of three options: the return of the lira as the single national currency; the introduction of a national currency pegged to the dollar; or the parallel use of two currencies - the lira and the euro. "Incredibile!" He figured out that the Euro would fail and so would Europe while he was semi-conscious from his hospital bed.
